    As I eagerly planned my daughter’s first birthday party, I wanted everything to be perfect – especially the treats. Inspired by the Berry First Birthday theme, I decided to make strawberry donuts. I used a recipe that I have used many times before. But, little did I know, one small change would make a large difference. I added fresh strawberries to the mix.

    Armed with fresh strawberries and a sense of excitement, I set out to create the perfect donuts. Mixing, baking, and icing, I poured my heart into each step, envisioning the delight on my daughter’s face when she tasted her strawberry donut.

    A Strawberry Donut Lesson on Preparing Ahead of Time

    I prepped nearly 40 donuts for her party. After I baked the strawberry donuts I iced them and allowed the icing to dry. Instead of the picture-perfect treats I had envisioned, I returned to find a sight that left me disheartened. The once beautifully iced donuts now resembled uncooked strawberry donuts, with the icing seeping straight into their soft centers.

    Quickly, I set to work to remove the fresh strawberries. I opted instead for a plain vanilla based donut iced with freeze-dried strawberry icing and topped with bits and pieces of freeze-dried strawberries for a sprinkle topping. The result? Pure strawberry donut bliss.

    From that day forward, I’ve embraced freeze-dried strawberries as my go-to ingredient for strawberry donuts. Their concentrated flavor and low moisture content ensure that my treats turn out perfectly every time.

    In my quest for the perfect sweetener, I eventually found solace in pure, slightly or unrefined cane sugar. Not only does it provide the right amount of sweetness without overwhelming the palate, but it also maintains the desired texture and color of the donuts. It’s the ideal complement to the other ingredients, enhancing their flavors without overshadowing them. The less processed a sugar is, the easier the body can process it.

    Not Too Sweet- Delicate Strawberry Donuts

    What sets this gluten-free donut base apart is its subtle sweetness. Unlike traditional donuts that can sometimes border on cloying, these treats strike the perfect balance. The modest amount of sugar allows the natural flavors of the other ingredients to shine through, creating a harmonious symphony of taste with each bite.

    Try Other Flavors, Strawberry Donuts Aren’t The Only Star

    Try other freeze dried fruits for different donut flavors: blueberry, raspberry, etc. You could also try these fruits in Cookie Dough Bites.

    Ingredients

    • Eggs
    • Avocado oil
    • Unrefined cane sugar
    • Pure vanilla extract
    • Gluten-free all-purpose flour
    • Baking powder
    • Baking soda
    • Powdered sugar
    • Milk of choice
    • Freeze-dried strawberries

    Instructions

    Preheat the oven to 350° fahrenheit and grease donut pan depending on the care instructions of your pan. Crack eggs into a medium sized bowl and lightly whisk.

    Add sugar, oil, and vanilla and whisk together.

    Add flour, baking powder, and baking soda to the bowl and combine well.

    Using a ¼ measuring cup, fill the cavities of the donut pan. Once all cavities are full, tap the pan against the counter a couple of times to even out the batter.

    Place donut pan into oven and bake for 12-14 minutes. Keep an eye on them toward the end of the bake time to bake sure they don’t get too golden. They are finished when you can press on the top of one of the donuts and you do not leave a fingerprint. After donuts have cooked, remove the pan and let sit for about 5 minutes. Put donuts on a drying rack as soon as possible.

    Begin Icing by crushing freeze dried strawberries in a ziplock bag until they turn to powder. Use a mesh strainer to separate powder from remaining seeds.

    Stir milk and powdered sugar well until clumps have dissolved. Stir in strawberry powder.

    When donuts have dried completely, immerse donut into the icing face down to coat the top of the donut. Wiggle the drizzling icing off and spin with your hand. Feel this out as you are icing the donut. There is no perfect way. Use your strong baking instincts.

    Crush some of the freeze dried strawberries to make pieces that can be sprinkled on top. Sprinkle strawberry pieces on top before icing dries.

    Hint: Add a little freeze-dried strawberry powder at a time until you find your perfect color.

    Substitutions

    Oil: Try coconut!

    Sugar: Maple syrup is too moist, coconut sugar makes the batter too dark.

    Variations

    Fruits: Try other freeze dried fruits for different donut flavors: blueberry, raspberry, etc.

    Vanilla Base

    • 2 eggs
    • ⅓ cup avocado oil
    • ⅓ cup unrefined cane sugar 67g
    • 1 teaspoon pure vanilla extract
    • ⅔ cup gluten free all purpose flour 90g
    • ¼ teaspoon baking powder
    • ¼ teaspoon baking soda

    Strawberry Icing

    • 1 cup Wholesome powdered sugar
    • 2 tablespoon Milk of choice
    • 2 tablespoon powdered freeze dried strawberries see recipe; try 1 tablespoons if you want a lighter pink color

    Additional Toppings

    • ¼ cup crushed freeze dried strawberries

    Instructions
     

    Cake Donut

    *This batter is very forgiving. There is no need to add the dry ingredients to a separate bowl first.
    *It is helpful to use a large enough bowl where you can dip the donut into the icing when it is time to ice.
