Instructions
Cake Donut
Preheat the oven to 350° fahrenheit and grease donut pan depending on the care instructions of your pan.
Crack eggs into a medium sized bowl and lightly whisk.
Add sugar, oil, and vanilla and whisk together.
Add flour, baking powder, and baking soda to the bowl and combine well. *See notes.
Using a ¼ measuring cup, fill the cavities of the donut pan. Once all cavities are full, tap the pan against the counter a couple of times to even out the batter.
Place donut pan into oven and bake for 12-14 minutes. Keep an eye on them toward the end of the bake time to bake sure they don't get too golden. They are finished when you can press on the top of one of the donuts and you do not leave a fingerprint.
After donuts have cooked, remove the pan and let sit for about 5 minutes. Put donuts on a drying rack as soon as possible.
Icing
Crush freeze dried strawberries in a ziplock bag until they turn to powder. Use a mesh strainer to separate powder from remaining seeds.
Stir milk and powdered sugar well until clumps have dissolved. Stir in strawberry powder.
When donuts have dried completely, immerse donut into the icing face down to coat the top of the donut. Wiggle the drizzling icing off and spin with your hand. Feel this out as you are icing the donut. There is no perfect way. Use your strong baking instincts.
Crush some of the freeze dried strawberries to make pieces that can be sprinkled on top. Sprinkle strawberry pieces on top before icing dries.
Notes
*This batter is very forgiving. There is no need to add the dry ingredients to a separate bowl first.*It is helpful to use a large enough bowl where you can dip the donut into the icing when it is time to ice.
